Upon using “Add Struts Capabilities”, I picked the wrong Struts version.
Now the option is grayed out, and I cannot change my choice. Anyway
around this problem? Is it possible to “Remove Strusts Capabilities” and
start all over?

You would have to do this manually, we don’t provide an automated way to do this. If you edit your .project file and remove the struts nature and I think there might be a struts builder that should do it. Then you can re-add it.
