Project Properties -> builders.
Added an ant build, but deleted the default builder.

The builder is listed in the .project file, so if the project is checked into source control, you could try and roll it back to a point before the builder was removed. There is no other way of restoring it.

I just found an example in the eclipse dir and updated .project file
All is well.
