Can anyone point me to a document that says how I can upgrade from Eclipse 3.0.1/ MyEclipse 3.8.2 to Eclipse 3.1.2/Current 3.1 version of MyEclipse?

Gabe,

Dowload eclipse sdk 3.1.2 for your platform from http://download.eclipse.org/eclipse/downloads/drops/R-3.1.2-200601181600/index.php
and me 4.1.1 from this site
Unpack eclipse 3.1.2 in new folder and install MyEclipse from start
You can set your old workspace when start eclipse with option -data <YOUR_WORKSPACE_HOME>
